How to make it

  • In bowl, lightly beat egg
  • Stir in milk, flour, and baking powder until incorporated
  • Add salt, pepper, and Tabasco sauce to taste
  • Sitr in zucchini and onion
  • Set aside, let batter rest 15 minutes
  • Place 1/4 inch oil of vegetable oil in a large, heavy skillet
  • Heat until hot over medium heat
  • Drop teaspoons batter into oil
  • Do not overcrowd pan
  • Cook until brown on both sides, about 2 minutes per side
  • Drain fritters on paper towels
  • Repeat until all are browned
  • Serve warm with pesto sauce, and extra Parmesan cheese
