Green On Green Zucchini Lace Fritters With Pesto Recipe
Easy to make. They are delicious. Served with delicious green pesto sauce. GREEN ON GREEN.

Ingredients
  • 1 egg
  • 2 tablespoons milk
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • Tabasco sauce to taste
  • 2 pounds small GREEN zucchini, coarsely grated, (can coarsely grate into julienne strips using food processor attachment)
  • 1/2 onion, peeled and *coarsely* grated (can use food processor)
  • Vegetable oil
  • GREEN pesto sauce, can make or purchase
  • They are delicious

Directions
  1. In bowl, lightly beat egg
  2. Stir in milk, flour, and baking powder until incorporated
  3. Add salt, pepper, and Tabasco sauce to taste
  4. Sitr in zucchini and onion
  5. Set aside, let batter rest 15 minutes
  6. Place 1/4 inch oil of vegetable oil in a large, heavy skillet
  7. Heat until hot over medium heat
  8. Drop teaspoons batter into oil
  9. Do not overcrowd pan
  10. Cook until brown on both sides, about 2 minutes per side
  11. Drain fritters on paper towels
  12. Repeat until all are browned
  13. Serve warm with pesto sauce, and extra Parmesan cheese
