Green On Green Zucchini Lace Fritters With Pesto

- 1 egg shopping list
- 2 tablespoons milk shopping list
- 1/2 cup flour shopping list
- 1 teaspoon baking powder shopping list
- salt and pepper to taste shopping list
- Tabasco sauce to taste shopping list
- 2 pounds small GREEN zucchini, coarsely grated, (can coarsely grate into julienne strips using food processor attachment) shopping list
- 1/2 onion, peeled and *coarsely* grated (can use food processor) shopping list
- vegetable oil shopping list
- GREEN pesto sauce, can make or purchase shopping list

How to make it
- In bowl, lightly beat egg
- Stir in milk, flour, and baking powder until incorporated
- Add salt, pepper, and Tabasco sauce to taste
- Sitr in zucchini and onion
- Set aside, let batter rest 15 minutes
- Place 1/4 inch oil of vegetable oil in a large, heavy skillet
- Heat until hot over medium heat
- Drop teaspoons batter into oil
- Do not overcrowd pan
- Cook until brown on both sides, about 2 minutes per side
- Drain fritters on paper towels
- Repeat until all are browned
- Serve warm with pesto sauce, and extra Parmesan cheese
