clay fired fish double baked

- (4) cod or Pollock fillets shopping list
- shredded lemon rind shopping list
- shredded orange rind shopping list
- quarter stick of butter shopping list
- dill weed shopping list
How to make it
- you need a set of clay fired baking dishes...glazed
- put these dishes in a preheated oven at 350 for thirty minutes..
- remove very hot -fish dishes- from oven
- drop in the butter....slice butter in chunks and it will melt quick
- lay fillets on melted butter
- sprinkle lightly with dill weed
- grate or grind the orange and lemon peel over the fillets..
- give it a good cover of fruit rinds
- bake in oven at 350 ..it may only take ten minutes...
- watch the rinds and the fish edges...don't worry about the butter.....
- when the fish goes pearly plump white and the rinds break down its done.
