How to make it

  • Bring first 3 ingredients to a boil and infuse for 20 minutes. Strain and reserve flavored syrup.
  • Puree 1 pints worth of berries in blender (reserving the rest for garnish). Add a third of the syrup and liquefy for a good minutes to breakdown puree as much as possible. Add the remainder of syrup and blend briefly to mix evenly. Strain through a medium meshed sieve into a bowl, pressing as much liquid through as possible. Pour into a ceramic casserole dish and place into the freezer for 1 hr. With a fork, scrape back and forth to break up any crystallization that may have formed. Place back into the freezer and scrape every 30 minutes over the next 2 ½ -3 hrs. The garanita will no longer be slushy but dry and fluffy when properly prepared.
  • To serve, garnish with the remainder of blueberries.
  • Note:
  • The granita will eventually harden when left for an extended amount of time.
  • To remedy, simply leave out of freezer for 10-20 minutes then fluff up with a fork.

    Thanks for posting this! I like to use lavender in cooking. Add the blossoms to a shortbread/sugar cookie type mix for a great cookie!!
