Rhubarb Nut Bread

- 1 egg, lightly beaten shopping list
- 1 1/2 cups firmly packed brown sugar shopping list
- 1 cup buttermilk shopping list
- 2/3 cup vegetable oil shopping list
- 1 teasp. vanilla shopping list
- 2 1/2 cups flour shopping list
- 1 teasp. baking soda shopping list
- 1 teasp. salt shopping list
- 2 cups ( 1/4 inch pieces) fresh or frozen rhubarb, (approx. 1/2 pound) shopping list
- 1/2 cup chopped pecans shopping list
- 1 cup sugar shopping list
- 1/2 teas. cinnamon shopping list
- 1 TBSP. butter, softened shopping list
How to make it
- In large bowl: combine egg, brown sugar, buttermilk, oil and vanilla
- stir well
- in bowl: combine flour, baking soda, and salt stir until blended
- add flour mixture to the brown sugar mixture stir until blended
- don't over mix
- fold in the rhubarb and the nuts
- pour batter into 2 well greased 8 x 4-inch loaf pans
- in small bowl: combine the sugar, cinnamon and the butter.
- stir with a fork until crumbly.
- sprinkle mixture over the batter
- bake in a preheated 350' F oven for 1 hour or until a wooden tooth pick comes out clean
- cool in pans for 10 minutes before turning out on a wire rack
