How to make it

  • cook bacon 80%,
  • drain off any extra fat
  • add onion, celery and pepper and saute until soft
  • remove from pan, add clam juice and cool slightly
  • stir in the melted butter
  • season with tabasco sauce, salt, and pepper
  • take four clam shells and put the mixture on top
  • of four opened clams
  • bake in convection oven at 350 degrees
  • for 15 minutes

    I love clams casino and this sounds fabulous! And Easy to do! I wish I could get good fresh clams around here. Don't see them too much. I was spoiled when I lived in Washington state. Great clams there.
