Wayside Inns Stuffed Jumbo Shrimp

- 2 med. stalks celery shopping list
- 12 sprigs parsley shopping list
- 1 lg. green pepper shopping list
- 1 lg garlic clove shopping list
- 3/4c salad oil shopping list
- 4c fresh bread crumbs shopping list
- 1/2tsp. salt shopping list
- 1/2tsp white pepper shopping list
- 2tsp grated parmesan cheese shopping list
- 4tsp spanish paprika shopping list
- 24 jumbo shrimp shopping list
- 3/4c melted butter shopping list
How to make it
- Puree or grind the celery,parsley,green pepper and garlic. In a saute pan,heat the salad oil. Saute the vegetable mixture approximately 10 mins over low heat. Plave in container,store refrigerated. This recipe calls for 4 tsp of this mixture;any leftovers may be used for seasoning in meatballs,or lobster with bread crumb stuffing
- To make the stuffing: Place the bread crumbs,salt ,pepper,cheese and paprika in bowl and blend together. Add the 4tsp reserved vegetable mixture and blend again
- To make the shrimp: Clean and devein. Remove most of the shell,but leave shell in tact on tail section.
- Bake the shrimp in six small casseroles,if possible. Place 1Tbs . melted butter in bottom of each casserole. Place 4 shrimp cut side down around each casserole. place a handful of stuffing on each shrimp,then position tail section so they come together in the center of casserole. Pour another 1 Tbs butter over weach casserole.
- Bake at 375 for approx. 15-20 mins. To check to see if cooked,lift 1 shrimp by the tail.If meat appears white,the shrimp is cooked thru. Serve in casserole or remove to a plate,garnish with lemon wedge.
