Yellow Squash Souffle Recipe
If you like yellow squash this is the recipe for you. It is so good and goes well with poultry, pork and fish dishes. I serve it often. It is very good. Enjoy

Ingredients
  • 2 pounds yellow squash
  • 2 eggs, beaten
  • 3/4 stick butter
  • 1/2 cup milk
  • 2 tablespoons brown sugar
  • 1 teaspoon salt
  • 2-1/2 cups pieces of bread torn small
  • 1 cup grated cheddar cheese
  • 1/2 medium onion finely chopped

Directions
  1. Cook the squash in boiling salted water until tender.
  2. Drain well and mash.
  3. Mix together squash, eggs, butter, milk, onion, brown sugar and salt.
  4. In a buttered casserole put a layer of torn bread, layer of squash mixture and a layer of cheese.
  5. Repeat and top with bread and dots of butter.
  6. Bake uncovered for 45 minutes at 350 degrees.
