Vegan Tofu Fajitas Recipe
My husband is a meat eater and even he loved this spin on the classic fajita, its lime marinated and perfect with spanish rice.

Ingredients
  • (use vegan ingredients)
  • 4 of your favorite large tortillas (I use corn or homemade)
  • 1/2 block of super or extra firm tofu)
  • 1/4-1/2 cup lime juice
  • kosher or sea salt
  • 2 tablespoons olive oil
  • 1 tsp sugar or splenda
  • 1 tomato diced
  • 1/4 cup lentils
  • 1 small red pepper
  • 1 small green pepper
  • 1 tablespoon minced garlic
  • pepper
  • red pepper

Directions
  1. Squeeze tofu block until all liquid is gone- you can use a paper towel
  2. cut block in half, and save the other half for other recipes in an air tight container with water (you can save tofu up to 4 days this way).
  3. Cut the tofu into1/8 in cubes, and put into a bowl
  4. Add all spices to taste and lemon juice
  5. Cover and marinate in fridge from 1 1/2 hours to overnight
  6. Heat oven to 275 degrees
  7. put all tortillas in foil and put in oven until ready to use
  8. cook lentils as directed about 45 minutes, drain and set aside
  9. slice red pepper and green pepper
  10. heat pan with oil until pan is med high heat
  11. add peppers and minced garlic and stir frequently for about 2 minutes, then add tofu
  12. make sure tofu comes to a golden brown on all sides
  13. remove tortillas from oven
  14. Prepare fajita
  15. I put lentils diced tomato red and green peppers and tofu altogether!
  16. Enjoy!
