How to make it

  • Dice up your eggplant
  • Warm the olive oil with garlic and crumbled peperoncino. After a minute or so add in thyme and eggplant. Fry this up until golden brown.
  • Finally add in chickpeas and cook for another 2-3 minutes.

    It was really good. I ate wrapped in pieces of piadina, which is a dead ringer for a flour tortilla. Very satisfying, full of flavor, but I did have to add a tiny bit of liquid to make mine come together. Probably because I salted and drained the eggplant, having had the last one soak up about a pint of oil. I love oil, but that was scary.
