How to make it

  • Heat olive oil in large nonstick skillet. Add eggplant, onions, garlic and cook over high heat, stirring occasionally for 5 minutes until the vegetables are soft. Add remaining ingredients and cover. Cook for 20 to 25 minutes and stir occasionally. Cool and transfer to a small bowl. Refrigerate about one hour.
  • Use whole grain crackers
