Eggplant Spread Recipe
The lemon and garlic mixed with the pepper and other spices add a zing to the eggplant

Ingredients
  • 1/2 tsp ground cumin
  • 1/2 tsp dried oregano
  • 1/8 tsp ground black pepper
  • 1/8 tsp salt
  • 2 Tbsp olive oil
  • 2 Tbsp fresh lemon juice
  • 2 cups eggplant chopped, untrimmed
  • 3 garlic cloves, minced
  • 4 Tbsp finely chopped onion
  • 1 cup tomatoes peeled, chopped

Directions
  1. Heat olive oil in large nonstick skillet. Add eggplant, onions, garlic and cook over high heat, stirring occasionally for 5 minutes until the vegetables are soft. Add remaining ingredients and cover. Cook for 20 to 25 minutes and stir occasionally. Cool and transfer to a small bowl. Refrigerate about one hour.
  2. Use whole grain crackers
