Eggplant spread

- 1/2 tsp ground cumin shopping list
- 1/2 tsp dried oregano shopping list
- 1/8 tsp ground black pepper shopping list
- 1/8 tsp salt shopping list
- 2 Tbsp olive oil shopping list
- 2 Tbsp fresh lemon juice shopping list
- 2 cups eggplant chopped, untrimmed shopping list
- 3 garlic cloves, minced shopping list
- 4 Tbsp finely chopped onion shopping list
- 1 cup tomatoes peeled, chopped shopping list
How to make it
- Heat olive oil in large nonstick skillet. Add eggplant, onions, garlic and cook over high heat, stirring occasionally for 5 minutes until the vegetables are soft. Add remaining ingredients and cover. Cook for 20 to 25 minutes and stir occasionally. Cool and transfer to a small bowl. Refrigerate about one hour.
