Ingredients

1/2 tsp ground cumin

1/2 tsp dried oregano

1/8 tsp ground black pepper

1/8 tsp salt

2 Tbsp olive oil

2 Tbsp fresh lemon juice

2 cups eggplant chopped, untrimmed

3 garlic cloves, minced

4 Tbsp finely chopped onion

1 cup tomatoes peeled, chopped

Directions

Heat olive oil in large nonstick skillet. Add eggplant, onions, garlic and cook over high heat, stirring occasionally for 5 minutes until the vegetables are soft. Add remaining ingredients and cover. Cook for 20 to 25 minutes and stir occasionally. Cool and transfer to a small bowl. Refrigerate about one hour.
