How to make it

  • Place peeled, cubed potatoes on paper towels and pat as dry as possible.
  • Place butter in large, deep, nonstick frying pan (a wok is ideal) and melt over medium heat.
  • Add potatoes, salt, and pepper.
  • As the potatoes begin to cook, toss occaisionally with a wooden spoon so they brown evenly,
  • Cook until nearly done; add garlic and brown sugar.
  • Let the brown sugar and butter caramellize on the potatoes as you stir. Keep them moving so they don't burn.
  • When the caramel is done,the potatoes are finished.
  • CAUTION: THEY WILL BE HOT!
