Custard Slices

- 1 packet (200g) cream cracker biscuits shopping list
- 4 cups milk (1 litre) or half milk and half cream shopping list
- 1 cup sugar (250 ml) shopping list
- 1/2 cup butter (62 ml) shopping list
- 1/2 cup cake flour (125 ml) shopping list
- 1/3 cup corn flour (100 ml) shopping list
- 2 teaspoons custard powder (10 ml) shopping list
- pinch of salt shopping list
- 1/2 cup water (125 ml) shopping list
- 3 eggs, seperated shopping list
- 1 teaspoon vanilla extract (5 ml) shopping list
- 2 cups icing sugar, sifted (500ml) shopping list
- 1/4 cup boiling water (62ml) shopping list
How to make it
- Grease a shallow glass rectangular bowl.
- Put about 15 biscuits in the bottom.
- Make rows of 5 x 3 biscuits.
- Heat up the milk until boiling point.
- Stir in sugar and butter until dissolved and melted.
- Take off the heat.
- Mix cake flour, corn flour, custard powder, salt and water well.
- Beat in the egg yolks.
- Stir a bit of the warm milk mixture into the egg mixture.
- Stir this gradually into the rest of the warm milk mixture.
- Put back on low heat.
- Keep on stirring until thick.
- Take off the heat.
- Stir in the vanilla extract.
- Beat the egg whites until stiff points form.
- Fold into the thickened mixture.
- Pour this over the bottom layer of biscuits.
- Put another layer of biscuits on top, exactly where the bottom ones are.
- Mix the icing sugar and boiling water well.
- Pour on top layer of biscuits.
- Spread evenly.
- Place overnight in fridge.
- Cut up in rectangular pieces.
- Serve
