Ingredients

How to make it

  • Peel and dice potatoes.
  • Put the eggs and potatoes in water and bring to a boil. Once to a full boil, let boil 10 to 15 min until potatoes are done. (Yes I do boil both together :D, trick I learned from a friend, old southern way)
  • While that is boiling , dice onion in a boil, add ranch, cheese, stir.
  • Drain potatoes and eggs, rinse with cold water.
  • While potatoes are cooling some more, I usually go ahead and peel and dice up the eggs into the ranch mixture
  • Once potatoes are cooled, add them to the ranch mixture and gently fold them in.
  • HAPPY EATING!!!

    Wow, I love this...missed it when you posted it, but glad I found it! I love lots of eggs in my tater salad too, and the cheese is a great addition. Nice to know the info about the starch property change, since that affects me as well.

    Also note this tip, alway make whatever mayo, mustard mix with pickles or onions or whatever first, then fold the potatoes in. This helps to keep the potatoes together and you will get a "potato salad" vs "mashed potato salad"
