This is something I prepare with the left over dough from the pizza. Kids love it and it’s a way to make them eat spinach.

Ingredients
  • Pizza dough
  • Spinach
  • Ricotta
  • Salt
  • Soybean oil to fry

Directions
  1. For the dough, just mix flour, olive oil (one tablespoon per cup of flour) a pinch of salt and warm water in which you have previously dissolved the yeast, let it raise till it doubles its volume.
  2. You can use fresh spinach or frozen. Boil them and then drain the water.
  3. In a bowl mix same quantity of spinach and ricotta, add salt as needed.
  4. With the dough make small dishes, like little pizzas, put a couple of tablespoons of the mix in the middle and cover with another dish of dough. Seal the edges with the fork or just with your fingers.
  5. Fry the little balls in hot soy bean oil.
  6. Sprinkle with salt. Better if served hot but they are good also at room temperature.

You can chose different fillings if you like, I love ricotta and salame, ricotta and ham, mozzarella ricotta and spinach, boiled cauliflower, or just veggies if you want………just get creative!
