This is a very good recipe that I came up with about 7 years ago and is good served with asparagus, hot homemade yest rolls, orange rice

Ingredients
  • 1/2 tsp. grated orange zest
  • 1/4 cup fresh orange juice
  • 2 Tbsp. fresh lemon juice
  • 4 salmon fillets with skin
  • 1-1/2 Tbsp. firmly packed brown sugar
  • 1/2 tsp. paprika
  • 1/2 tsp. ground curry
  • 1/2 tsp. salt
  • 1/4 tsp. cinnamon
  • 1/8 tsp. cayenne
  • 1 medium lemon quartered
  • cooking spray

Directions
  1. Preheat the oven to 425*F.
  2. Set orange zest aside in a small bowl.
  3. In a large plastic zip top bag combine orange juice and lemon juice. Rinse salmon and pat dry with paper towels. Add juice mixture, seal bag. Turn several times to coat evenly.
  4. Refrigerate minutes, turning occasionally times.
  5. meanwhile, stir brown sugar, paprika, curry powder, salt, cinnamon and cayenne into orange zest.. Set aside.
  6. Remove salmon from marinade, discard the marinade.
  7. Arrange salmon with skin side down on baking sheet. Rub brown sugar mixture over the salmon.
  8. Line a baking sheet with foil. Lightly spray with cooking spray.
  9. Bake 14 minutes or until salmon flakes easily when tested with fork.
  10. To serve use a metal spatula to lift salmon flesh from skin. Place salmon on plates and serve with lemon wedges.
