This is another food we had a lot when I was a kid. I made this a lot for my own kids and now they make it for their own. It is a great way to get kids to eat eggs. And did I mention it is Fast!

Cookinggood, I'm glad to see this recipe posted. My husband taught me how to make these twenty-five years ago. He called them "One-eyed Sams." It was always a hit at our house. Glad to see the tradition being carried on in your family.

ps I got a kick from my boyfriend whose not originally from this country, when he tried to tell me the 'something special' his mother did with his eggs, I assured him, mothers from all countries have been making eggs in their nests for some time - he was quite surprised to learn this... lol - my high five to ya!

I think its funny everyone has a name for these...my family calls them egg in a holes...very creative i know :) Has anyone seen V For Vendetta...they eat these in that movie and everytime i watch it i have to make one!

I always loved this when I was a kid. To this day, I still make eggs like this - sometimes just for me - because it reminds me of my mom and grandma and that makes me smile from inside.
