How to make it

  • Butter the slice of bread on both sides. Use a large round cookie cutter or a glass to cut a circle in the middle of the bread.
  • Heat a well seasoned cast iron frying pan (or non-stick if you don't have cast iron) and place the slice of bread with the hole in it in the pan. Put a teaspoon of butter in the hole. Put Egg in the hole. Salt and pepper.
  • Cook for 2 minutes and flip egg and bread to cook on the other side until the egg is cooked the way you like it. (my family like then over easy)
  • In the same pan toast the round you cut out of the bread.

    I think its funny everyone has a name for these...my family calls them egg in a holes...very creative i know :) Has anyone seen V For Vendetta...they eat these in that movie and everytime i watch it i have to make one!

    I have made this many times - this is a fave for kids young and old alike - I like making eggs in the nests with rustic italian bread or an herbed bread - great posting you shared!
    I am sure it will bring a few people down memory lane -
    ps I got a kick from my boyfriend whose not originally from this country, when he tried to tell me the 'something special' his mother did with his eggs, I assured him, mothers from all countries have been making eggs in their nests for some time - he was quite surprised to learn this... lol - my high five to ya!

    Cookinggood, I'm glad to see this recipe posted. My husband taught me how to make these twenty-five years ago. He called them "One-eyed Sams." It was always a hit at our house. Glad to see the tradition being carried on in your family.
