How to make it

  • Mix cream cheese, sugar, vanilla, and eggs together.
  • Place a vanilla wafer in bottoms of 12 paper-lined muffin cups.
  • Pour cream cheese mixture on top of wafers.
  • Bake at 350° for 20 min. or until centers are almost set.
  • Cool and refrigerate 2 hrs. or overnight.
  • Mix some coconut with a few drops of green food coloring. (Just keep stirring and tossing, and eventually it'll be green throughout.) Sprinkle cheesecake cups with green coconut and jelly beans just before serving.
  • Shape licorice to make basket handles. Makes 12.
