Chocolate Zucchini Bread With Chocolate Cream Cheese Recipe
A new twist on traditional zucchini bread. Serve with chocolate cream cheese

Ingredients
  • 2 1/2 c flour
  • 1/2 c cocoa
  • 2 1/2 t baking powder
  • 1 1/2 t baking soda
  • 1/2 t salt
  • 1 t cinnamon
  • 2 c sugar
  • 3/4 c shortening
  • 2 eggs
  • 2 t vanilla
  • 2 c grated zucchini
  • 1/2 c milk
  • 1/2 c chopped walnuts
  • Chocolate Cream Cheese
  • 1/4 c cocoa
  • 8 oz pkg softened cream cheese
  • 1/2 powdered sugar
  • 2-4 T milk
  • 1/4 c chopped walnuts

Directions
  1. Mix dry ingredients
  2. Cream shortening and sugar
  3. Add eggs, vanilla, zucchini, milk and nuts
  4. Mix in dry ingredients
  5. Mix just until combined
  6. Spread batter into two loaf pans
  7. Bake 1 hr at 350 degrees or till done
  8. Chocolate Cream Cheese
  9. Mix cream cheese, cocoa powder, powdered sugar and 2 T milk
  10. Mix until smooth, add more milk if necessary. Consistency should be spreadable but not too soft.
  11. Add chopped nuts
  12. May be served on croissants, muffins or waffles

I made this today. It was pretty good. I feel it needed more of something I'm just not sure what. Everyone who tasted it thought it was really good.
