Ingredients
  • 1 lb very ripe tomatoes, peeled and chopped (You can use canned tomatoes if you want to)
  • 1 small bunch (or half a package) of fresh baby spinach
  • 4 garlic cloves, crushed
  • grated zest of 1/2 lime
  • juice of 2 limes
  • 1/4 tsp Tabasco sauce
  • 12 ounces angel hair pasta (capellini)
  • 1/4 cup olive oil
  • kosher salt and freshly ground pepper (to taste)
  • freshly grated Parmesan cheese (for serving)

Directions
  1. Combine the tomatoes, spinach, garlic, lime zest and juice in a bowl.
  2. Stir in the Tabasco sauce and olive oil.
  3. Cover and set aside for 20-30 minutes.
  4. **While you are doing the above, Cook the pasta in lightly salted water until al dente.**
  5. Drain the pasta and return to the clean pot you used to boil it in. (No heat)
  6. Add the tomato mixture and toss well.
  7. Season with salt and pepper (to taste) and add Parmesan cheese before serving.
