Malay Prawn And Pineapple Curry Recipe
Usually we eat this with rice, but you can also eat this dish with noodles or bread. The taste is spicy but, if you are not use to spicy food, use less chillies. But as my family say it, the spicier the better.

Ingredients
  • 8 shallots
  • 5 cloves garlic
  • 2 candlenut (if you can find any)
  • 1" fresh turmeric or 2 teaspoon of tumeric powder
  • 5 - 8 chilies (depending on how spicy you like)
  • 2 stalks of lemom grass
  • 500g prawns, clean
  • 1/2 pineapple, cubed
  • 3 green chillies
  • 500ml of coconut milk
  • salt
  • sugar
  • 5 tablespoon of olive or vegetable oil

Directions
  1. Grind shallots, garlic, candlenut, turmeric, chillies and lemon grass
  2. Heat the oil and stir fry the grind ingredients until fragrant.
  3. Add 3 cups of water and bring to boil.
  4. The add the prawns, pineapple and green chilies. Bring to a boil switch to low heat and cook for 15 minutes.
  5. Finally, stir in coconut milk.
  6. Add in salt and sugar to taste.
  7. Cooks until it boils

This sounds like an easy dish to prepare and won't take very long. Is there a substitution for the candlenut? Could I use macadamia nuts instead? This is on my "Gotta Try" list. Thank you for the post!
