Eggplant Creole

- 1 small onion chopped shopping list
- 1 green pepper chopped shopping list
- 1/2 cup butter shopping list
- 1/2 cup raw rice shopping list
- 1 medium eggplant peeled and chopped shopping list
- 1 16 oz. can tomatoes shopping list
- 1/4 tsp basil shopping list
- 1/4 tsp oregano shopping list
- 1 cup beef bouillon shopping list
- 1/4 tsp salt shopping list
- 1/2 tsp pepper shopping list
- 2 to 3 dashed Tobasco shopping list
- 1 cup grated sharp cheese shopping list
How to make it
- saute onion and green pepper in butter. add rice and saute' until golden. add all other ingredients except cheese. bake in greased 2 quart casserole at 350* for 30 minutes. sprinkle cheese on top and cook 30 minutes longer. serve hot.
