This is more than a substitution for maple syrup (I live in a place that doesn't sell it) - it's a sweet syrup of its own, with just a hint of honey.

If it carmalizes, add hot water or add cold water and microwave. This is variable depending on your humidity, but once you figure it out once you should know how much to add to begin with. If your is actually too watery (perhaps you are at a less humid climate than me), you'll know to add less water in the original step 1.

Works as a substitution for maple syrup both as is (poured over pancakes) or in recipes (I also substitute it for plain honey or brown sugar in some sweet recipes).
