This is more than a substitution for maple syrup (I live in a place that doesn't sell it) - it's a sweet syrup of its own, with just a hint of honey.

Ingredients
  • 100-115 ml sugar (white if you have it, brown if you don't) (1/2 cup minus 2 Tbsp or 1/2 cup)
  • 25 g brown sugar (about 30ml or 2 Tbsp)
  • 100 ml water (1/2 cup minus 2 Tbsp)
  • 15-30 ml honey (use 110 sugar + 30 honey or 115 sugar + 15 honey based on how much you like the honey flavor) (1-2 Tbsp)

Directions
  1. Dump first 3 ingredients in an unheated saucepan. Bring to a boil.
  2. Cook on medium heat (180C) for 3 minutes, stirring constantly.
  3. Add 15 ml honey.
  4. Remove from heat, pour into container good for pouring syrup.
  5. Store, sealed, in fridge.
  6. Tastes best warm, so eat it fresh or microwave it for about 30 seconds!

Works as a substitution for maple syrup both as is (poured over pancakes) or in recipes (I also substitute it for plain honey or brown sugar in some sweet recipes).


I have run out of Maple syrup before, you are so good at making substitutions, we have to be creative at times of need and that is when creativity spawns a great recipe like this one.

Alterations


If it carmalizes, add hot water or add cold water and microwave. This is variable depending on your humidity, but once you figure it out once you should know how much to add to begin with. If your is actually too watery (perhaps you are at a less humid climate than me), you'll know to add less water in the original step 1.
