Cajun Rice

- 1 cup rice shopping list
- 1/2 cup onions (approx 1/2 of a large onion), chopped shopping list
- 1can (14.5 oz) diced tomatoes shopping list
- 1 green bell pepper, diced shopping list
- 1 clove garlic, crushed shopping list
- 2 Tbsp extra virgin olive oil shopping list
- 2 tsp (more or less to taste - I use a WHOLE LOT) Cajun or Sylia's Soulfood seasoning. shopping list
How to make it
- In a medium saucepan, heat oil over medium heat until it "ripples".
- Drain tomatoes, reserving liquid in a medium bowl.
- Add enough water to make a total of 1 1/2 cups of liquid.
- Saute the onions, pepper and garlic until soft.
- Add seasoning and stir for 1 minute.
- Add rice, tomatoes and tomato liquid and bring to a boil.
- Reduce heat to low, cover and simmer until all liquid is absorbed. (Check after 15 minutes, but it should take around 25 minutes).
- Remove from heat and let it stand covered for 5 minutes.
- Uncover and fluff with fork. Serve hot and enjoy!
