How to make it

  • In a medium saucepan, heat oil over medium heat until it "ripples".
  • Drain tomatoes, reserving liquid in a medium bowl.
  • Add enough water to make a total of 1 1/2 cups of liquid.
  • Saute the onions, pepper and garlic until soft.
  • Add seasoning and stir for 1 minute.
  • Add rice, tomatoes and tomato liquid and bring to a boil.
  • Reduce heat to low, cover and simmer until all liquid is absorbed. (Check after 15 minutes, but it should take around 25 minutes).
  • Remove from heat and let it stand covered for 5 minutes.
  • Uncover and fluff with fork. Serve hot and enjoy!
