Cajun Rice Recipe
This is a great side with my favorite Cajun flavors and goes well with pretty much anything! If you have leftover chicken you can throw it in or even fish or sausage...the list goes on. Enjoy!

Ingredients
  • 1 cup rice
  • 1/2 cup onions (approx 1/2 of a large onion), chopped
  • 1can (14.5 oz) diced tomatoes
  • 1 green bell pepper, diced
  • 1 clove garlic, crushed
  • 2 Tbsp extra virgin olive oil
  • 2 tsp (more or less to taste - I use a WHOLE LOT) Cajun or Sylia's Soulfood seasoning.

Directions
  1. In a medium saucepan, heat oil over medium heat until it "ripples".
  2. Drain tomatoes, reserving liquid in a medium bowl.
  3. Add enough water to make a total of 1 1/2 cups of liquid.
  4. Saute the onions, pepper and garlic until soft.
  5. Add seasoning and stir for 1 minute.
  6. Add rice, tomatoes and tomato liquid and bring to a boil.
  7. Reduce heat to low, cover and simmer until all liquid is absorbed. (Check after 15 minutes, but it should take around 25 minutes).
  8. Remove from heat and let it stand covered for 5 minutes.
  9. Uncover and fluff with fork. Serve hot and enjoy!
