Strawberry Coconut Rice Delight Recipe
Can't say how many this one will serve as I'll bet you can't eat just one helping. LOL Do enjoy Prep time does not including refrigeration time.

Ingredients
  • 3 c. cooked rice
  • 1/2 c. chopped nuts
  • 1-8 oz. cream cheese at room temp.
  • 1-21 oz. strawberry pie filling
  • 1 c. powdered sugar
  • 1-13 oz. whipped topping
  • 1-6 oz. coconut instant pudding
  • 3 c. milk
  • 1 c. coconut flakes, toasted

Directions
  1. After rice has cooked, remove from heat and add chopped nuts and 1/2 of the cream cheese, stirring with a fork until blended.
  2. Spread into a 9×13-inch pan. Refrigerate until chilled. When chilled, spread strawberry pie filling on top, chill again.
  3. Blend remaining cream cheese with the sugar until smooth. Add 1/2 of the whipped topping and spread over strawberries, refrigerate.
  4. Mix instant pudding with milk and beat until thick. Spread over last layer. Refrigerate for 30 minutes.
  5. Spread remaining whipped topping over pudding mixture.
  6. Sprinkle coconut on top.

Not sure about the rice in this but will give it a try.


This one sounds quite good,would be nice to use up the left over rice ,instead of just eating it for breakfast,Thank-you for this recipe.
