Strawberry Coconut Rice Delight

- 3 c. cooked rice shopping list
- 1/2 c. chopped nuts shopping list
- 1-8 oz. cream cheese at room temp. shopping list
- 1-21 oz. strawberry pie filling shopping list
- 1 c. powdered sugar shopping list
- 1-13 oz. whipped topping shopping list
- 1-6 oz. coconut instant pudding shopping list
- 3 c. milk shopping list
- 1 c. coconut flakes, toasted shopping list
How to make it
- After rice has cooked, remove from heat and add chopped nuts and 1/2 of the cream cheese, stirring with a fork until blended.
- Spread into a 9×13-inch pan. Refrigerate until chilled. When chilled, spread strawberry pie filling on top, chill again.
- Blend remaining cream cheese with the sugar until smooth. Add 1/2 of the whipped topping and spread over strawberries, refrigerate.
- Mix instant pudding with milk and beat until thick. Spread over last layer. Refrigerate for 30 minutes.
- Spread remaining whipped topping over pudding mixture.
- Sprinkle coconut on top.
