Ingredients

How to make it

  • Heat butter and oil in skillet
  • Saute shallots till translucent
  • Salt both sides of chicken
  • Add chicken and fry till golden on both sides
  • Remove chicken from skillet and set aside
  • Deglaze the skillet with the 3/4c. of vinegar
  • Return chicken to pan and simmer til chicken is done
  • Remove chicken from skillet again
  • Bring liquid in skillet to a boil and reduce till it has the consistency of light cream
  • Add whipping cream and reduce again till sauce coats the spoon
  • Add chiken back to pan abd heat through
  • Add fresh raspberries
  • Garnish with fresh mint leaves
  • Serve
  • This is really good served with roasted fresh veggies and a side of buttered pasta
