How to make it

  • Preheat oven to 325 degrees F.
  • Butter custard cups.
  • In a heavy pan, bring cream and vanilla bean to a boil.
  • Beat sugar and yolks with electric mixer until pale and thick.
  • Remove vanilla bean from cream.
  • While mixer is running on low, very slowly add hot cream.
  • Pour cream mixture into prepared custard cups.
  • Place into roasting pan.
  • Pour simmering water into pan, only half way up the sides of the cups.
  • Bake for 35-45 minutes. Remove cups from pan and let cool.
  • Just before serving, sprinkle tops with granulated sugar and caramelize by placing cups under broiler until bubbly.
  • Makes either 4 to 6 servings depending on cup size.
