- 2 cups heavy cream shopping list
- vanilla bean, split shopping list
- 6 tablespoons (plus) sugar shopping list
- 5 large egg yolks shopping list
How to make it
- Preheat oven to 325 degrees F.
- Butter custard cups.
- In a heavy pan, bring cream and vanilla bean to a boil.
- Beat sugar and yolks with electric mixer until pale and thick.
- Remove vanilla bean from cream.
- While mixer is running on low, very slowly add hot cream.
- Pour cream mixture into prepared custard cups.
- Place into roasting pan.
- Pour simmering water into pan, only half way up the sides of the cups.
- Bake for 35-45 minutes. Remove cups from pan and let cool.
- Just before serving, sprinkle tops with granulated sugar and caramelize by placing cups under broiler until bubbly.
- Makes either 4 to 6 servings depending on cup size.
