White Chocolate Mudcake Recipe
This is the cake I made for my fiancee for his birthday...I canhonestly say this is the most delicious thing that has ever been made in my kitchen. It is very rich, but so very worth it:)

  • 250g butter, chopped
  • 180g white eating chocolate, chopped coarsely
  • 1 1/2 cups (330g) caster sugar
  • 3/4 cup (180mL) milk
  • 1 1/2 cups (225g) plain flour
  • 1/2 cup (75g) self raising flour
  • 1/2 teaspoon vanilla extract
  • 2 eggs, beaten lightly
  • WHITE CHOCOLATE GANACHE
  • 1/2 cup (125mL) thickened cream
  • 360g white eating chocolate, chopped finely
  • CHOCOLATE CURLS
  • 1 1/3 cups (200g) dark chocolate melts, melted
  • 1 1/3 cups (200g) white chocolate melts, melted
  • 1 1/3 cups (200g) milk chocolate melts, melted

Directions
  1. Preheat oven to moderately slow. Grease deep 20cm round cake pan; line base and side with baking paper.
  2. Combine butter, chocolate, sugar and milk in a medium saucepan; stir over low heat until melted.Transfer mixture to a large bowl; cool 15mins.
  3. Stir in sifted flours, extract and egg; por into prepared pan. Bake, uncovered, in moderately slow oven about 1 hour 40 mins. Cool cake in pan.
  4. Meanwhile, make chocolate ganache and curls.
  5. Turn cake onto serving plate top side up. Spread ganache all over cake; top with chocolate curls.
  6. WHITE CHOCOLATE GANACHE
  7. Bring cream to boil in small saucepan; pour over chocolate in a medium bowl, stir wih metal spoon until chocolate melts. Cover bowl, refrigerate, stirring occasionally, about 30 mins or until ganache is of a spreadable consistancy.
  8. CHOCOLATE CURLS
  9. Spread dark, white and milk chocolate seperately on marble slab or bench top. When chocolate is almost set, drag icecream scoop over the surfaceof the chocolate to make curls. Set chocolate can be scraped up, re-melted and used again.

Wow, what a stunning recipe.


You know, I hear my cake buddies online chatting occasionally about the white chocolate mud cake. People give raves over it! I will have to convert this to our measurements with the chocolate/butter parts and go for it! I'm assuming the oven temp would be about 300? That's what I usually do cakes on....

I'm not sure what it ends up being in farenheit, but in celcius I cooked this on 150'. it comes out gorgeous...just brown on the outside, and still white on the inside. I think if you cooked it at a higher temperature, it would burn and not be quite as sweet.
