Coco Bananas Recipe

This is definitely an indulgence--adult style. In summer we put the baking dish right on the barbecue for about 5 minutes after the meal and continue from there.

Ingredients
- 4 bananas
- 4 tbsp butter
- 3 tbsp lemon juice
- 1 tbsp lemon zest
- 4 tbsp brown sugar
- 1/4 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/3 cup banana liqueur
- 4 tbsp coconut milk
- 1/2 cup shredded unsweetened coconut lightly toasted in oven
Directions
- Preheat oven to 350ºF
- Grease a tin baking dish with butter and dot with remaining butter.
- Peel bananas, slice lengthwise and place in baking dish. Sprinkle with lemon juice, zest, sugar, cinnamon and ginger.
- Bake in preheated oven for 10 minutes.
- Pour the banana liqueur over the bananas, tossing the bananas to distribute the liquid. Drizzle with coconut milk
- Serve with vanilla ice cream and sprinkle with toasted coconut.
