Coco Bananas Recipe

Ingredients

4 bananas

4 tbsp butter

3 tbsp lemon juice

1 tbsp lemon zest

4 tbsp brown sugar

1/4 tsp ground cinnamon

1/4 tsp ground ginger

1/3 cup banana liqueur

4 tbsp coconut milk

1/2 cup shredded unsweetened coconut lightly toasted in oven

Directions

Preheat oven to 350ºF

Grease a tin baking dish with butter and dot with remaining butter.

Peel bananas, slice lengthwise and place in baking dish. Sprinkle with lemon juice, zest, sugar, cinnamon and ginger.

Bake in preheated oven for 10 minutes.

Pour the banana liqueur over the bananas, tossing the bananas to distribute the liquid. Drizzle with coconut milk

Serve with vanilla ice cream and sprinkle with toasted coconut.
