Coco Bananas Recipe
This is definitely an indulgence--adult style. In summer we put the baking dish right on the barbecue for about 5 minutes after the meal and continue from there.

Ingredients
  • 4 bananas
  • 4 tbsp butter
  • 3 tbsp lemon juice
  • 1 tbsp lemon zest
  • 4 tbsp brown sugar
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/3 cup banana liqueur
  • 4 tbsp coconut milk
  • 1/2 cup shredded unsweetened coconut lightly toasted in oven

Directions
  1. Preheat oven to 350ºF
  2. Grease a tin baking dish with butter and dot with remaining butter.
  3. Peel bananas, slice lengthwise and place in baking dish. Sprinkle with lemon juice, zest, sugar, cinnamon and ginger.
  4. Bake in preheated oven for 10 minutes.
  5. Pour the banana liqueur over the bananas, tossing the bananas to distribute the liquid. Drizzle with coconut milk
  6. Serve with vanilla ice cream and sprinkle with toasted coconut.
