Recipe taken from Zoo Atlanta's -Zoo Plate Special Cook Book. Excellent recipe for vegetarian diets.

Ingredients
  • 2 cups chopped onion
  • 2 Tablespoons peanut or vegetable oil
  • 1/2 teaspoon cayenne, or other ground dried chilies
  • 1 teaspoon pressed garlic clove
  • 2 cups cabbage
  • 3 cups sweet potatoes, cut into 1 inch cubes
  • 3 cups tomato juice
  • 1 cup apple or apricot juice
  • 1 teaspoon salt
  • 1 teaspoon fresh ginger, peeled and grated
  • 1 Tablespoon fresh cilantro, chopped
  • 2 tomatoes, chopped
  • 1 1/2 - 2 Cups okra, chopped
  • 1/2 cup peanut butter

Directions
  1. Saute onions in oil for about 10 minutes.
  2. Stir in cayenne and garlic and saute for a couple more minutes.
  3. Add cabbage and sweet potatoes and saute, covered for a few minutes.
  4. Mix in juices, salt, ginger, cilantro and tomatoes.
  5. Cover and simmer for about 15 minutes, until the sweet potatoes are tender.
  6. Add okra; simmer for 5 minutes more.
  7. Stir in peanut butter, place the pan on a heat diffuser, and simmer gently until ready to serve.
  8. Add more juice or water if the stew is too thick.
