Chicken Chorizo Bake Recipe

Ingredients

6 chicken thighs

4 potatoes, thick slices

2 C. frozen lima beans

1 onion, diced

1 chorizo sausage, sliced

4 cloves garlic, minced

1-2 jalapeno, minced

2 limes, sliced

1 ½ C. chicken stock

½ tsp pimentón de la vera (Spanish paprika)

Olive oil

salt and fresh ground pepper

Directions

Put a little olive oil in a 9x 13” baking dish.

Place potatoes in baking dish, cover with beans and onions and pour chicken stock over them. Add chicken. Cover with limes, chorizo, peppers and garlic.

Drizzle olive oil over the entire thing. Sprinkle with paprika, salt and pepper to taste.

Cook in 400° F oven for 45 min or until chicken is done.
