I was thinking lemon curd too - I like everything as lemony as possible. And Trader Joe's does an apricot-orange combination that would be great in this (marmalade is not my favorite). So glad spring is finally coming; I know this will be a hit as a warm weather dessert. But something tells me it's not South Beach-friendly!

Sounds like a good dessert that can be thrown together really fast for a 'spur of the moment' dinner with friends/family... and a pretty one too! I bet you could use Triple-Sec orange liquor too. Thanks.
