I have been craving light, lemony/orange flavored desserts. I found this one in a low-fat cookbook. It is a trifle with lemon pudding, angel food cake and mandarin oranges.

I was thinking lemon curd too - I like everything as lemony as possible. And Trader Joe's does an apricot-orange combination that would be great in this (marmalade is not my favorite). So glad spring is finally coming; I know this will be a hit as a warm weather dessert. But something tells me it's not South Beach-friendly!
