Tsaos Tofu and Broccoli Lite

- 3/4 cup vegetable broth shopping list
- 1 1/2 tbsp cornstarch shopping list
- 2 tbsp Splenda shopping list
- 2 tbsp tamari shopping list
- 1 tbsp rice wine vinegar shopping list
- 1 tbsp grated fresh ginger shopping list
- 2 scallions, minced shopping list
- 1 head broccoli, chopped shopping list
- 3 garlic cloves, minced shopping list
- 1/2 tsp red pepper flakes shopping list
- 1 350g package low-fat extra-firm tofu (I use President's Choice), cut into 2-inch cubes shopping list
- 2 cups cooked brown rice, hot shopping list
How to make it
- Whisk together broth, cornstarch, Splenda, tamari, vinegar and ginger; set aside.
- Heat a wok or large skillet over medium-high heat, and spray with PAM.
- Add scallions and broccoli, cook 4-5 minutes, stirring often.
- Add garlic and pepper flakes and cook 2 minutes further.
- Add tofu cubes and cook until browned all over, 3-5 minutes.
- Add sauce, and simmer until sauce thickens, about 3 minutes.
- Divide rice into 4 wide bowls, top each with 1/4 of the wok contents. Serve hot.
