Irish Lace Cookies Recipe
These cookies are beautiful and taste so good!! Not too sweet and a wonderful crispness. I make these every St. Patty's Day and also to go with tea or coffee anytime.

Ingredients
  • 1 stick (1/2 cup) unsalted butter, softened
  • 3/4 cup firmly packed light brown sugar
  • 2 T flour
  • 2 T milk
  • 1 tsp vanilla extract
  • 1 1/4 cups old fashioned rolled oats

Directions
  1. Preheat oven to 350 degrees
  2. In a bowl cream the butter with the brown sugar until light and fluffy.
  3. Beat in the flour, milk, and vanilla.
  4. Stir in the oats and drop rounded teaspoons of the dough about 3 inches apart onto parchment paper-lined cookie sheet.
  5. Bake for 8 minutes or until they are bubbly and golden brown.
  6. Cool on sheet for 1 minute and CAREFULLY remove with a metal spatula onto wire cooling rack.
