Ingredients
  • 3 cups par boiled rice plus 1 tbsp fenugreek seed
  • 1 cup urad dhal
  • pinch of salt

Directions
  1. Wash and Soak rice and the dhal separately for minimum 4 hours .
  2. In a food processor or grinder , grind the dhal first with abit of water until it increases in volume and becomes smooth .
  3. Pour in a bowl and set aside .
  4. Now grind the rice with adding abit of water until it becomes smooth .
  5. Add the dhal in and the salt .
  6. Once it blends well , remove the batter and keep in a bigger bowl and leave it overnite to ferment.
  7. Next day , add water to get a batter of pouring consistency . With practice, you' ll know how much water to add .
  8. Heat a non stick flat pan. Grease it .
  9. Put a ladleful of batter in the centre of the pan.
  10. Immediately spread the batter in a circular motion starting from the centre, to get a crepe.
  11. Must do it fast in spreading the batter,
  12. otherwise it will start cooking instantly and u end up with a thick crepes .
  13. The idea is to get thin crepes.
  14. Drizzle margarine or olive oil around the edges.
  15. Wait till the dosai becomes golden and becomes a little crisp around the edges.
  16. Carefully loosen the dosai from the pan and flip.
  17. Cook on the other side too .
  18. Serve hot basically with any kind of gravy / curry , honey , jam ..... depends on your mood

Alterations


Ghee / butter Dosai - Drizzle Ghee / Butter on top of the batter before you flip it ( Note Step 16 , above ) .
Tomato Dosai - Same as above , but sprinkle some chopped tomatoes on to before you flip it .
Masala Dosai - mashed potatoes with fried onion and 1 green chilli sliced , Keep in the middle ( like a filing ) and roll it .
Onion Dosai - with sliced onion on top before u flip it
Ghee Masala Dosai - Same as masala dosai but drizzle some ghee on top of it .
Paper Dosai - make the batter abit watery and make the dosai more cripy .
Paper masala dosai - Same as above plus the potato filling .
Ghee Onion Dosai - Same as Onion dosai and drizzle some ghee over it .
Onion Rawa ( semolina ) Dosai - With 1 cup dosai batter , add 2 spoonful of rava , 1 tbsp yogurt , few thinly sliced small onions & 1 chilli and a piece of ginger . Mix well . Prepare just like any other dosai .
Ghee Rawa Dosai - Same as above plus drizzle some ghee on it before you flip .
Rawa Masala Dosai - same as above with mashed potato and cooked vegetables ( like carrot , peas and french beans ) fillings .
Egg Dosai - Put a small egg on top before you flip it .
