Irish Whiskey Chocolate Fondant Recipe
This is a very nice chocolate desert with the little kick from the whiskey!

Ingredients
  • 110 g / 4 oz of castor sugar
  • 3 free range eggs, separated
  • 150 g/ 7 oz plain chocolate broken into pieces
  • 110 g / 4 oz of butter
  • 2½ tablespoons of Irish Whiskey
  • 25 g / 1 oz all purpose flour
  • Pouring cream to serve

Directions
  1. Pre-heat the oven to 180º C/350F Gas 4.
  2. First beat the egg yolks and sugar together in a bowl until they are pale and have increased in volume.
  3. Meanwhile, in another bowl, melt the chocolate and butter together over a pot of simmering water, be careful not to overcook the chocolate.
  4. Whisk the egg whites in another clean bowl, and continue to whisk until they form soft white peaks.
  5. To assemble the mixture first fold the melted chocolate mixture with the egg and sugar mixture.
  6. Then sift in the flour and fold gently.
  7. Spinkle in the whiskey and then fold in the egg whites, taking care not to beat the air out of the mixture.
  8. Grease 4 ramekins with some butter and fill with the fondant mixture, then place in the pre-heated oven for 8 minutes until risen.
  9. Serve hot with ice cream.
