Irish Whiskey Chocolate Fondant

- 110 g / 4 oz of castor sugar shopping list
- 3 free range eggs, separated shopping list
- 150 g/ 7 oz plain chocolate broken into pieces shopping list
- 110 g / 4 oz of butter shopping list
- 2½ tablespoons of Irish whiskey shopping list
- 25 g / 1 oz all purpose flour shopping list
- Pouring cream to serve shopping list
How to make it
- Pre-heat the oven to 180º C/350F Gas 4.
- First beat the egg yolks and sugar together in a bowl until they are pale and have increased in volume.
- Meanwhile, in another bowl, melt the chocolate and butter together over a pot of simmering water, be careful not to overcook the chocolate.
- Whisk the egg whites in another clean bowl, and continue to whisk until they form soft white peaks.
- To assemble the mixture first fold the melted chocolate mixture with the egg and sugar mixture.
- Then sift in the flour and fold gently.
- Spinkle in the whiskey and then fold in the egg whites, taking care not to beat the air out of the mixture.
- Grease 4 ramekins with some butter and fill with the fondant mixture, then place in the pre-heated oven for 8 minutes until risen.
- Serve hot with ice cream.
