How to make it

  • Pre-heat the oven to 180º C/350F Gas 4.
  • First beat the egg yolks and sugar together in a bowl until they are pale and have increased in volume.
  • Meanwhile, in another bowl, melt the chocolate and butter together over a pot of simmering water, be careful not to overcook the chocolate.
  • Whisk the egg whites in another clean bowl, and continue to whisk until they form soft white peaks.
  • To assemble the mixture first fold the melted chocolate mixture with the egg and sugar mixture.
  • Then sift in the flour and fold gently.
  • Spinkle in the whiskey and then fold in the egg whites, taking care not to beat the air out of the mixture.
  • Grease 4 ramekins with some butter and fill with the fondant mixture, then place in the pre-heated oven for 8 minutes until risen.
  • Serve hot with ice cream.
