How to make it

  • PREHEAT OVEN TO 375
  • IN A LARGE MIXING BOWL, COMBINE BROWN SUGAR AND MARGARINE.
  • BEAT WITH MIXER ON MEDIUM SPEED, SCRAPING THE BOWL, UNTIL WELL MIXED.
  • ADD SOUR CREAM AND EGGS.
  • CONTINUE BEATING ,SCRAPING OFTEN, UNTIL WELL MIXED
  • STIR IN CARROTS, COCONUT, AND RAISINS.
  • IN A MEDIUM BOWL, STIR TOGETHER FLOUR, BAKING SODA, AND CINNAMON.
  • ADD FLOUR MIXTURE TO SOUR CREAM MIXTURE STIR UNTIL JUST MOISTENED.
  • FILL 2/3 FULL. BAKE FOR 20-25 MINUTES, OR UNTIL LIGHTLY BROWNED.
