- 1/2 CUP brown sugar, FIRMLY PACKED shopping list
- 1/4 CUP margarine, SOFTENED shopping list
- 1 CUP low-fat sour cream shopping list
- 2 eggs shopping list
- 1 CUP carrots, SHREDDED shopping list
- 1/2 CUP flaked coconut(OPT.) shopping list
- 1/2 CUP raisins shopping list
- 1 1/2 CUPS all-purpose flour shopping list
- 1TSP. baking soda shopping list
- 1TSP. cinnamon shopping list
How to make it
- PREHEAT OVEN TO 375
- IN A LARGE MIXING BOWL, COMBINE BROWN SUGAR AND MARGARINE.
- BEAT WITH MIXER ON MEDIUM SPEED, SCRAPING THE BOWL, UNTIL WELL MIXED.
- ADD SOUR CREAM AND EGGS.
- CONTINUE BEATING ,SCRAPING OFTEN, UNTIL WELL MIXED
- STIR IN CARROTS, COCONUT, AND RAISINS.
- IN A MEDIUM BOWL, STIR TOGETHER FLOUR, BAKING SODA, AND CINNAMON.
- ADD FLOUR MIXTURE TO SOUR CREAM MIXTURE STIR UNTIL JUST MOISTENED.
- FILL 2/3 FULL. BAKE FOR 20-25 MINUTES, OR UNTIL LIGHTLY BROWNED.
