Baked for my son Adler 's 7th birthday . Must admit , I made lots of mess and it did test my patience abit . But the result was worth the effort . Everybody just loved it .

Ingredients
  • 4 oz cooking chocolate, chopped
  • 1/3 C unsweetened cocoa powder
  • 1 C boiling water
  • 2 C all purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 C unsalted butter
  • 2 C sugar
  • 3 L eggs
  • 2 tsp pure vanilla extract
  • 3/4 C low fat evaporated milk
  • Few almonds , roasted in butter and chopped into fairly tiny pieces
  • Filling
  • 1/2 C whip cream
  • 6 oz baking chocolate, diced
  • 2 oz butter
  • Glaze
  • 1/2 cup whip cream
  • 5 oz cooking chocolate diced

Directions
  1. Preheat oven to 180 degrees C
  2. Butter a 9 inch loose bottomed baking pan
  3. In a non stick pan place the chopped chocolate and cocoa powder. Pour the boiling water over the chocolate and cocoa powder and stir until they have melted. Cool it
  4. In a bowl,sift the flour, baking powder, baking soda
  5. Cream the butter. Add the sugar and beat until fluffy
  6. Add the eggs, one at a time . beat well
  7. Add the vanilla extract and melted chocolate . Beat
  8. Add the flour and milk in three additions, beginning and ending with the flour mixture.
  9. Pour the batter in the cake pan and level the top
  10. Bake for about 55 minutes
  11. Filling
  12. Put the cream in a saucepan and turn the heat to medium. Remove the pan before the cream starts to bubble . Add the chocolate, and stir until dissolved.
  13. Stir the butter into the cream and let it cool completely
  14. Arranging
  15. Remove from oven and place on a wire rack to cool for about 15 minutes
  16. When completely cooled, split the cake into 2 layers
  17. Put a layer on a cake board . Place on the wire rack
  18. Put some kitchen towels below them . It's ez dat way to clean up later
  19. Spread the filling over the cake and sprinkle the almonds . Place the other layer on top
  20. Place the cake in the refrigerator
  21. Glaze
  22. Simmer the cream in a non stick pan, add the diced chocolate and stir till smoothed. cool it
  23. Pour the mixture immediately over the cake and use a spatula to cover all the surface and sides
  24. Refrigerate
  25. I liked it when it's straight out of fridge and right into the microwave oven and warm it 20 secs .
  26. It was heavenly : )

Oooooh! That looks so gooey and messy, it's gotta be good. You know me and chocolate, never ever could resist it and never ever gonna try *GRIN* Definitely gets my 5. I have a question though, hmmm ... where am I gonna get 3 Leggs?!?!? ;)
