Ingredients
  • Soup
  • 2 litres (8 cups) Chicken stock
  • 3 shallots
  • 2 tsp sesame oil
  • 1 chicken stock cube
  • Wontons
  • 25 wonton wrappers or 1/4 Pkt
  • 1 egg
  • water
  • salt
  • wonton filling
  • 500g 1 lb pork mince
  • 1/4 small cabbage (cut into 4 use only 1)
  • 1 tsp soy sauce
  • 1/2 tsp sesame oil
  • 1 tsp grated fresh or root ginger (peel skin befour using)

Directions
  1. Wonton filling
  2. combine finely shredded cabbage with mince pork, soy sauce, sesame oil and grated ginger mix well place a tsp of prepared filling slightly below center of the wonton
  3. wrapper brush around edges of wrapper with lightly beaten egg
  4. Fold wrapper diagonally in half to form a triangle press edges to seal press out any air pockets around the filling fold edges
  5. brush a dab of egg on the front right corner of each triangle and on the back of the left corner with a twisting action bring the two moistened surfaces together pinch to seal
  6. wontons
  7. drop the wontons into vigorously boiling salt water cook until they float to the top about 15mins drain
  8. soup
  9. finely chop shallots add to pot with chicken stock sesame oil, and crumbled stock cube, bring to boil reduce heat simmer three mins add wontons to soup
