Carnitas Recipe
Easy slow cook recipe for fall apart tender carnitas. Can be adapted for pulled pork easily. Just use your favorite spices instead of the Oregeno and Cumin. Coat liberally with bar-b-que sauce before you throw it under the broiler.

  • Pork Shoulder (or Pork Butt) Roast
  • Salt
  • Pepper
  • Onion Powder
  • 1 Tablespoon Oregeno
  • 1 Tablespoon Cumin
  • 1 Tablespoon Garlic Powder
  • 2 Limes (one for at the table)

Directions
  1. Slice off any big hunks of fat - you don't need to be to careful, just the big pieces. Cut roast up into large fist-sized pieces; if the roast contains a bone go ahead and use that hunk too.
  2. Liberaly coat the chuncks of meat with salt, pepper and onion powder.
  3. Place chunks of meat into the crock pot and set on high for an hour. After that reduce temp to low and let cook for at least 6-7 more hours. The pork can easily cook for 10 hours without any harm to the flavor or texture.
  4. Once the meat is fall apart tender - you really want to wait for this point, before this it'll still be kinda tough. Take tongs and place the meat into a baking dish (like a 9 x 13 glass cake pan for instance). Shred apart the meat with a couple of forks.
  5. Sprinkle the Oregeno, Cumin and Garlic over the meat. Squeeze one of the limes over the meat as well.
  6. Take the juices that are left in the crock pot and poor over the meat as well.
  7. Place under a broiler for 5-7 minutes, or until you get some crispy bits on the tops of the meat.

Does any liquid go into the crock pot?


Nope...the pieces of pork go in dry - after a while the fat and juices from the meat will melt out and give you plenty of liquid. I was leary about that at first myself.


How easy and wonderful is that? I love the citrus flavor in Carnitas, and this has it. Can't wait to try it. I know I'm a fan!


Sounds so good. I just picked up the meat because it was on sale and now I can't wait to use this recipe. Yum!
