Easy Empanadas

- turkey variation shopping list
- 1 lb. ground turkey shopping list
- 1 onion, diced shopping list
- 1 can tomato sauce(8 oz.) shopping list
- 4 tsp. cajun seasoning shopping list
- 1/2 cup monterey jack, grated shopping list
- beef variation shopping list
- 1 lb. ground beef shopping list
- 1 onion, diced shopping list
- 1 pkg. taco seasoning plus water according to pkg. directions shopping list
- 1/4 cup salsa shopping list
- 1/2 cup monterey jack cheese, grated shopping list
- 3 pkg. of refrigerated biscuits (7.5 oz., 10 biscuits) shopping list
- 1 egg, beaten shopping list
- oil for frying shopping list
How to make it
- Saute meat until cooked through, breaking up with a fork
- Remove meat from pan
- Add onions to fat and cook until tender
- Return meat to pan
- Add seasoning, and sauce or taco seasoning and simmer until liquid is gone
- Cool completely
- Add cheese to meat mixture
- On floured surface, roll out 1 biscuit to 4 inch diameter round
- Put 1 tbls. of meat mixture on round
- Brush half of round with egg
- Fold over filling to create half circle
- Seal edges by pressing with tines of fork
- Put on baking sheet and cover with damp towel
- Repeat with remaining biscuits
- Put oil in pan 1/2 inch deep
- Heat to 350 (If no thermometer, stick the end of a wooden spoon into oil and when it bubbles around the whole spoon, it's hot enough)
- Fry in batches until golden brown, about 2 minutes per side
- Drain on paper towel
