How to make it

  • Cut one side of each date, and stuff the dates with the Hummus. Be as generous as you dare.
  • Shave small shards of the Parmesan and stick them into the Hummus, so that they stand out from the date.
  • Sprinkle a wee bit of Balsamic over all the stuffed dates. Be stingy.
  • Mince the fresh basil and sprinkle it over the stuffed dates.
  • Serve on a pretty plate, lined with a paper doily.
  • Each mouthful (2 per serving) gives sweetness (dates), tartness (garlic), softness (hummus), firmness (cheese), freshness (basil), and the wisdom of age (balsamic).
