Sugar Free Butter Pecan Cookies Recipe
Even though these are sugar free you can't tell it. These little delights are very good. I make this for my diabetic mother and she loves them. I took some to work and nobody had any clue that they were actually "healthy" cookies. Enjoy

Ingredients
  • 3 cups sugar free biscuit mix
  • 1/3 cup pecan pieces
  • 1 cup pitted dates
  • 2 egg whites
  • 1/3 cup warm water
  • 2 teaspoons vanilla
  • 1/2 cup butter
  • Fruit sweetened jam
  • Pecan halves

Directions
  1. Preheat oven to 350.
  2. Use a blender or food processor to chop pecan pieces until finely ground.
  3. Sift biscuit mix then stir in pecans and set aside.
  4. Use blender or food processor to purée dates gradually adding egg whites and warm water.
  5. Beat several minutes until creamy.
  6. Melt butter and then stir in date cream and vanilla.
  7. Fold liquid ingredients into biscuit mix.
  8. Stir only until blended.
  9. On an ungreased cookie sheet form dough into cookies 1/4" thickness by 2" diameter.
  10. Press a thumb print into the middle of each and decorate each cookie with jam and/or pecan halves.
  11. Bake at 350 for 8 minutes.
