ROASTED LAMB ON A BED OF ONIONS AND POTATOES Recipe
Expensive but very good and very impressive. If you want a special occasion dish that will impress try this one. Yummy.

Ingredients
  • 3 tablespoons olive oil
  • 2 pounds onions peeled and sliced
  • 6 cloves garlic chopped
  • 1 bunch fresh parsley chopped
  • 2 pounds potatoes peeled and sliced
  • 11/2 cups chicken broth
  • 1 teaspoon salt
  • 2 teaspoons freshly ground black pepper
  • 5 pound leg of lamb butterflied

Directions
  1. Preheat oven to 400.
  2. In a large skillet heat two tablespoons of the oil then sauté onion until tender.
  3. Combine half the garlic and parsley with the sliced potatoes.
  4. Grease a baking dish with the remaining oil.
  5. Place a layer of potatoes in the dish followed by a layer of sautéed onion.
  6. Pour in just enough broth to cover.
  7. Loosely cover with foil and bake for 25 minutes.
  8. Uncover and bake for 30 minutes more checking to see if the mixture is still moist.
  9. Add more broth if dry.
  10. Meanwhile make slits in the lamb with the point of a knife.
  11. Coat lamb with the remaining garlic and parsley massaging into the lamb.
  12. Place lamb over the potato mixture and bake for another 25 minutes.
  13. Remove from oven and let rest for 10 minutes before slicing.
  14. Serve slices of lamb on a bed of onions and potatoes.
