Ingredients

How to make it

  • Blend shallots, garlic and ginger to a paste mixture.
  • Heat oil in a saucepan. Add in paste mixture. Fry until fragrant.
  • Add in cinnamon stick, star anise, cardamon pods and curry leaves.
  • Add in curry powder mixture, and fry for 1 minute until fragrant.
  • Add in chicken and potatoes. Mix with curry paste and add in water.
  • Add in tamarind puree and cook for 5 minutes.
  • Add in coconut milk and simmer until chicken tender and potatoes soft. Add salt to taste.
  • Add in tomatoes and chillies and cook for another 3 minutes.
  • Serve with rice

    This sounds good - we have a missionary friend from India who loves curry - will have to try to make this for him next time he comes to the states for a visit

    Thanks so much for sharing this! I plan on making it this week. We love curry. Not sure if I can get the leaves but I have everything else. I will substitute powder perhaps.
