Chicken Curry

- half chicken, clean and cut into small pieces (take off skin if you don't want too much fat) shopping list
- 8 shallots shopping list
- 4 cloves of garlic shopping list
- 3 cm of ginger shopping list
- 4 cm of cinnamon shopping list
- 2 star anise shopping list
- 4 cardamom pods shopping list
- 2 tablespoon of curry powder, mix in 2 tablespoon of water shopping list
- 6 curry leaves shopping list
- 3 tablespoon of tamarind puree shopping list
- 1 cup of coconut milk shopping list
- 3 cups of water shopping list
- 3 potatoes, peel, cut into half shopping list
- 2 tomatoes, cut into half shopping list
- 1 red chilli shopping list
- 1 green chilli shopping list
- 2 tablespoon olive oil shopping list
- salt to taste shopping list
How to make it
- Blend shallots, garlic and ginger to a paste mixture.
- Heat oil in a saucepan. Add in paste mixture. Fry until fragrant.
- Add in cinnamon stick, star anise, cardamon pods and curry leaves.
- Add in curry powder mixture, and fry for 1 minute until fragrant.
- Add in chicken and potatoes. Mix with curry paste and add in water.
- Add in tamarind puree and cook for 5 minutes.
- Add in coconut milk and simmer until chicken tender and potatoes soft. Add salt to taste.
- Add in tomatoes and chillies and cook for another 3 minutes.
- Serve with rice
