Vegetable Ragu Soup

- 1 cup onions diced shopping list
- 2 cups mushrooms quatered shopping list
- ¾ cup celery frans diced (center of the celery heart) shopping list
- 4 Tbsps. garlic chopped shopping list
- 2 cup yellow squash diced shopping list
- 1 cup green squash shopping list
- 2 cups cherry tomatoes half fresh half canned with juice shopping list
- 3 cups stock any kind beef, vegetable or chicken shopping list
- 15 oz cannellini beans (drained and rinsed) shopping list
- 2-3 cups of water shopping list
- ¼ cup fresh parsley finely chopped shopping list
- 1 tsp basil shopping list
- 1 tsp oregano shopping list
- 1 tsp italian seasoning shopping list
- 2 tps cumin shopping list
- ½ tsp crushed red pepper flakes or to taste shopping list
- ¾ cup Orzo uncooked shopping list
- 1 tbsp sugar shopping list
- salt and pepper to taste shopping list
- parmesan cheese grated shopping list
How to make it
- In a 5 quart pot add one tbsp of olive oil heat to medium high add onions, mushrooms, celery, garlic, squash yellow and green cooked till onions are clear, add fresh tomatoes and cook for 20 minutes over medium heat.
- Add stock, canned tomatoes with juice , cannellini beans and spices add Orzo and cook till Orzo is tender, adding water if the soup becomes to thick, add sugar salt and pepper. Remove from heat and serve with fresh grated cheese.
