How to make it

  • In a 5 quart pot add one tbsp of olive oil heat to medium high add onions, mushrooms, celery, garlic, squash yellow and green cooked till onions are clear, add fresh tomatoes and cook for 20 minutes over medium heat.
  • Add stock, canned tomatoes with juice , cannellini beans and spices add Orzo and cook till Orzo is tender, adding water if the soup becomes to thick, add sugar salt and pepper. Remove from heat and serve with fresh grated cheese.
