Ingredients
  • 1 pound finely ground Lamb (or Lean Beef)
  • 1 cup grated or pureed Onion
  • 1 cup minced Parsley
  • 1/2 Tsp ground Cinnamon
  • 1 Tsp Salt.
  • 1/4 Tsp Fresh Ground Pepper
  • 1 Recipe Tahini Sauce (Posted)
  • 1 Recipe Sumac condiment (Below)

Directions
  1. BASIC KEFTA:
  2. In a large bowl, spread out meat to expose as much surface as possible. Combine Cinnamon with with salt & pepper. Sprinkle onto meat. Add Parsley, and Onion. Mix well, kneading until the mixture becomes cohesive. Chill for 1 hr. to let flavors blend and to make handling easier.
  3. Divide into 8 to 10 balls. Thread each ball onto a skewer and mold into a thick finger about 4 inches long but not much more than 1" thick. Grill or broil in oven until done. Or form into 3 - 4 inch tapered footballs and grill on top of charcoal.
  4. Serve with Arabic Bread, Tahini Sauce and or Sumac condiment.
  5. Sumac Mixture: Mix 1/3 cup minced Parsley with small Onion slivered into thin crescents. Sprinkle with 1-2 Tbls ground Sumac.
  6. Toss lightly, spoon over broiled Kefta.
