Ingredients
  • 8 - Serving Size Pieces of Boneless, Skinless Chicken Breasts
  • 2 - Medium Oregon Potatoes, Peeled and Quartered
  • 2 - Small Zucchini, Sliced in 1/2 Inch Rounds
  • 2 - Medium Carrots, Sliced in 1/2 Inch Rounds
  • 4 - Onion Slices (Thin or thick.....Whatever you prefer!!)
  • 8 Tablespoons - Chicken Broth
  • 2 Teaspoons - Dried Basil or Tarragon
  • Salt and Pepper to Taste
  • 4 - 15 x 18 Inch Pieces of Heavy Duty Aluminum Foil

Directions
  1. Preheat oven to 350'.
  2. Place two pieces of chicken on each piece of aluminum foil.
  3. Divide vegetables in four equal portions.
  4. Place one slice of onion on top of chicken. Arrange vegetables around and on top of chicken.
  5. Salt and pepper to taste and sprinkle 1/2 teaspoon of desired herb over top of chicken and vegetables.
  6. Bend sides of foil up and pour 2 tablespoons of chicken broth on each portion. Crimp foil at top to create a package effect.
  7. Place on cookie sheet and bake at 350 degrees for 45 to 60 minutes.
  8. Serve entire package to each person.
  9. *****OPEN very carefully!! Will be very hot!!!*****
