Flat Iron Steaks with Wine Caper Sauce

- 4 flat iron steaks, 6 to 8 ounces each and 1 inch thick shopping list
- 1 cup dry white wine shopping list
- 1 Tbls. Dijon mustard shopping list
- 2 Tbls. drained capers shopping list
How to make it
- Heat large cast iron skillet to medium-high heat
- season steaks on both sides with salt and pepper
- cook 6 to 7 minutes per side for medium rare (if browning 2 quickly reduce heat on second side)
- transfer to warm (not hot) plate warmed with sink water & cover loosely with foil. Set aside. Leave any brown bits in skillet for sauce.
- SAUCE:
- Add wine to skillet and boil over med.-high heat until syrupy 3 or 4 minutes
- Whisk in the mustard and stir in capers along with any juices on resting steaks plate. Serve sauce over steaks.
