How to make it

  • Heat large cast iron skillet to medium-high heat
  • season steaks on both sides with salt and pepper
  • cook 6 to 7 minutes per side for medium rare (if browning 2 quickly reduce heat on second side)
  • transfer to warm (not hot) plate warmed with sink water & cover loosely with foil. Set aside. Leave any brown bits in skillet for sauce.
  • SAUCE:
  • Add wine to skillet and boil over med.-high heat until syrupy 3 or 4 minutes
  • Whisk in the mustard and stir in capers along with any juices on resting steaks plate. Serve sauce over steaks.

    i wish i see this recipe yesterday, i love the sauce , i cooked on medium high heat, for 4 min each and it turn medium well, but still taste preety good, i pile them in the plate and cover with foil, and all the juice come done( did i do something wrong there,)
