Flat Iron Steaks With Wine Caper Sauce Recipe
Think it's all in the name, but never had any comparable when out to eat. It's quick, easy and really good with the Scallops brown butter and hazelnut recipe if you want surf and turf.

Ingredients
  • 4 flat iron steaks, 6 to 8 ounces each and 1 inch thick
  • 1 cup dry white wine
  • 1 Tbls. Dijon mustard
  • 2 Tbls. drained capers

Directions
  1. Heat large cast iron skillet to medium-high heat
  2. season steaks on both sides with salt and pepper
  3. cook 6 to 7 minutes per side for medium rare (if browning 2 quickly reduce heat on second side)
  4. transfer to warm (not hot) plate warmed with sink water & cover loosely with foil. Set aside. Leave any brown bits in skillet for sauce.
  5. SAUCE:
  6. Add wine to skillet and boil over med.-high heat until syrupy 3 or 4 minutes
  7. Whisk in the mustard and stir in capers along with any juices on resting steaks plate. Serve sauce over steaks.

I wish i see this recipe yesterday, i love the sauce , i cooked on medium high heat, for 4 min each and it turn medium well, but still taste preety good, i pile them in the plate and cover with foil, and all the juice come done( did i do something wrong there,)


Super simple and very tasty. My wife was skeptical, but it was delicious.
