Ingredients
  • 6 HARD BOILED EGGS
  • 1 OZ. BUTTER
  • 1 OZ PLAIN FLOUR
  • 1/2 PINT MILK
  • 3 TBLSP FRESH PARSLEY
  • 3 TBSP CHOPPED FRESH DILL
  • SALT AND PEPPER
  • 1/4 TSP DRY MUSTARD
  • 10 0Z. PEELED PRAWNS
  • 3 TBSP GRATED CHEDDAR OR EMMENTHAL CHEESE

Directions
  1. PREHEAT OVEN
  2. SHELL AND SLICE THE HARD BOILED EGGS
  3. MELT BUTTER IN A PAN AND STIR IN FLOUR
  4. COOK, STIRRING FOR 1 MINUTE.
  5. REMOVE FROM HEAT AND GRADUALLY ADD MILK.
  6. BRING TO BOIL, STIRRING UNTIL THICKENED
  7. STIR IN SALT AND PEPPER, MUSTARD, PARSLEY AND DILL
  8. ARRANGE PRAWNS AND EGGS IN OVENPROOF DISH
  9. POUR SAUCE OVER AND SPRINKLE WITH CHEESE
  10. BAKE FOR 15 - 20 MINUTES UNTIL TOP IS GOLDEN AND BUBBLING.
  11. FOR AN EVEN SPICIER FLAVOUR REPLACE THE MUSTARD WITH A PINCH OF CURRY POWDER.
