Stuffed Cornish Hens

- 6 frozen breakfast sausage shopping list
- 2 small onions shopping list
- 4 slices homemade-style white bread torn into small pieces shopping list
- 3 Tbs. unsalted butter,melted shopping list
- 1/4 tsp. dried sage shopping list
- 1/4 tsp dried thyme shopping list
- kosher salt and fresh ground pepper shopping list
- 4 Rock Cornish hens(1-11/4 lbs. each) rinsed and dried shopping list
- 1/2c white wine or vermouth,optional shopping list
- one 14 or 141/2oz. can chicken broth shopping list
- 3Tbs unbleached all purpose flour shopping list
How to make it
- Preheat oven to 375;arrange frozen sausages in a shallow roasting pan and roast till cooked through,about 18 to 20 mins.. Set the sausage aside till they are cool enough to handle;then cut them into1/4" slices. Resarve the pan. Turn heat up to 475
- Meanwhile,finely chop one onion and coarsely chop the other. Combine the sliced sausages,bread,finely chopped onion,2Tbs of the butter,the sage,thyme,1/4 tsp salt and 1/4 tsp pepper. Season the hens inside and out with an additional 1/4tsp salt and 1/4tsp pepper. Stuff each hen with 1/4 of the bread mixture and tie the legs. Arrange the hens on a rack in a shallow roasting pan and drizzle the wine and remaining 1Tbs butter over them.
- Roast the hens for 20 mins. Add coarsely chopped onion to the pan and continue roasting for 10-15 mins longer,until meat thermometer inserted in thigh joint registers 170. Transfer the hens to a platter,cover loosely with foil and let rest 10 mins
- Meanwhile,put roasting pan on burner;add the broth and bring tio a boil,stirring to loosen any brown bits in bottom of pan. Whisk together 1/4c water and the flour;add to the roasting pan and bring to a boil,stirring constantly. Simmer 3 mins. Serve the hens with the sauce.
